Best cheese overall for cardiovascular health and inflammation

What's the best cheese to lower CVD. I have very high ldl and normal HDL and normal triglycerides but would like my hdl and triglycerides to improve. I have just been diagnosed with CKD as well. I have always eaten whole foods but started carnivore 2 years ago and animal based about 6 months ago. I have relied on beef, tons of butter and eggs though.

I want to cut out the butter and start increasing intake of cheese. I understand raw is the best however most raw I can find is A1 cheese.

Which would be the best cheese to add in my diet?
