tonight was crazy
so we did 300 covers tonight which is really unusual for us , for context there’s 3 of us in the back , one person on pantry , another on broiler/grill and me on sauté doing pastas and seafood. dude that shit was nuts , i have my weekends off for my food pop ups and caterings and i didn’t have a choice to have valentine’s day off. tickets to the floor, every 30 minutes we’d just grab a big rope of tickets and set them up and keep going. from 4-9 it was just non stop, no water , no vape no breaks, just next pasta , next branzino , next risotto. we fucking killed that shit , i started laughing at one point cause like what the fuck , it was just stupid to witness something like this for the first time. i know plenty of you guys are jaded to this kinda thing, but it was my first time just getting absolutely fucked and it was so fun, the shift went by so quick and the flow state was wonderful, didn’t think about anyone of the stupid shit going on in my life, just food and what’s next. 21 years old for reference so i have a few years in the industry, but haven’t had the chance to experience something like this. happy valentine’s day .
