Breakfast sandwiches, pork chops with carrots and taco meat. I think the biggest accomplishment was fitting it all on my shelf of the fridge.
The sandwiches are fried eggs and sausage rounds, with the cheese left off for when I heat it up. They'll be eaten with apple slices.
The pork chops were baked to the bare minimum temp, they're being reheated in the oven and will look nicer when I eat them. I also bought scalloped potatoes to go with them. The carrots I steam in beef broth with seasonings and use it to make a gravy after.
The taco meat is seasoned ground beef mixed with riced cauliflower for added veggies. I don't like much veggies with tacos or burritos but I don't taste it this way. I did accidentally buy the type with riced broccoli and carrot but it's whatever.
I do have actual veggies to go with everything but not prepped. And I forgot to take a picture of the fruit salad before I brought it to work.
Another accomplishment was possibly getting my roommate into meal prepping. When he realized he pays $12 a day for breakfast and I bought enough ingredients for 12 breakfast sandwiches for $18 he started thinking about it. He doesn't cook much though so I might offer to do some for him if he buys the ingredients.
