How nitpicky should I be with contractors?

Just started a big project with our contractors, they’re about a week in and only some of the minor work has been done so far. They just finished up changing the location of our closet and I’ve noticed a whole bunch of things I’m not happy with. Some are major that definitely need to be addressed (doors don’t fully close, trim doesn’t match the rest of the room) but some are definitely more minor (the paint is splotchy in some areas, the paint up to the ceiling line is a little sloppy, etc.) I want to set the precedent of a high standard of work but I don’t want to be overly nit picky. What’s an appropriate balance?
