Hokiyama or Nakagawa
I stumbled upon these two and I want o grab one just now sure which way to go. Ok, Nakagawa is a no brainer… but I find that lately it seems like we in this sub only talk about or discuss a small handful or makers. Myself as well. I just feel like there are a lot of really good under represented Hamono out there.
So I came across this Hokiyama Hamono gyuto, didn’t know much about Hokiyama but apparently they make many knives that are sold under other names, I think Tosa Ichi, Sakon Ginga, Harukaze and Ittetsu are some that I found. The specs and choil shot looks pretty good, and at sub $170 for a ginsan 240 cold be an amazing budget steal… I know someone must have any experience with Hokiyama or one of its rebranded knives. Love to hear your thoughts.
On the other side is the very well known Nakagawa san sharpened by Tadokoro. W2 240 for $260 (without a handle) or W2 210 for $225 (without handle). Was thinking 240 but the taper on the 210 seems better.
