NKD Okeya Ginsan Honesuki
I received this Okeya 150mm ginsan honesuki as a gift from my in-laws, and I'm thrilled! I've been interested in getting a honesuki, and my requirements were double bevel, stainless, and Western handle. This one checks all the boxes!
The knife is reasonably sharp OOTB, and it is quite thin behind the edge. The grind isn't quite symmetrical, but I don't see that being a problem. The choil and spine are both rounded, but only the choil is polished. The balance point of the knife is perfect for a pinch grip. While the rosewood handle is nothing fancy, it is exactly what I like for smaller knives (there's something about the narrow Western shape that makes small blades feel nimble).
Because of the double bevel and slight belly, I intend to use this as a utility knife as well as for breaking down poultry (because I honestly don't do that very often). I tried this tonight for veggie prep and it fared quite well. It wedged carrots a bit but glided through fennel and garlic. Tomorrow night, chicken thighs are on the menu, so I'll get a chance to use it as intended!
