Wich GPU should i buy?

For the last few years, I've been rocking my old MSI GTX 680 2GB card. However, I've decided to build a new PC. I've already bought the CPU, RAM, etc. (listed below). Now, I'm looking for the perfect GPU to finish off my build. There are three AMD GPUs that I'm really looking at right now, each at different price ranges.

The reason the choice is so hard to make is that I'm not completely sure about what I'm going to need. My goal is not to build the next PS5, as I already own one. I just want a PC for school, productivity, and some gaming, mainly games like CSGO, Valorant, Arma 3, Sea of Thieves, and Football Manager 24. As you can see, these are not the most demanding titles. My main goal is to play these games at 1080p, not 4K. Jumping from a GTX 680 to a card of this generation is going to be a huge upgrade, but now the question is which card is the best choice for me.

The first card, the RX 6700 XT, is, of course, the best card and is a 399% upgrade from my 680. The main concern is the price and whether it's overkill. The next option is the RX 7600. This card lies just between the others in terms of price and performance, being 355% faster than the 680. The main concern with this card is that it's not as good as the RX 6700 XT, and the upgrade to a way better card is €69,-. The next card is the RX 6600; this is going to be the budget option. This card is 281% better than the 680. The problem with picking this card is whether it can handle the load right now and how it will perform four years from now.

As you can see, I have a minor dilemma in picking the perfect GPU for my next system. I would love to know what you guys think. :)
