How do I write a cannibal character?

I'm writing a story about assassins where one is a cannibal who takes up the job to essentially be paid to kill and eat. How do I do this without making it too messed up because I don't want it to be an overly dark story? Is this even a good idea for a character? Anything else I should probably know?
